Chef’s tip
Handle gently and avoid over-mixing. For burgers, form loose patties and season just before cooking; sear over medium-high heat and cook ground beef to 160°F. For sauces, brown in batches and finish with acidity (tomato, wine, or lemon) to lift the richness.
